Polyphenol is not one substance but a broad family of compounds. Some contribute to bitterness and pungency, yet a peppery sip cannot prove a total polyphenol value or eligibility for a health claim.

Polyphenol is not a single compound

“Polyphenols” is an umbrella term that includes hydroxytyrosol and tyrosol derivatives, oleuropein and ligstroside derivatives, oleocanthal and oleacein. Two “total polyphenol” results cannot be compared properly without knowing the analytical method, compounds included and reporting unit.

Why do the amount and profile vary?

Cultivar, grove and climate, fruit ripeness, the delay before milling, extraction conditions, filtration and storage can all affect the phenolic profile. The same cultivar may differ between harvests, and some compounds decline during storage. Any product claim should therefore be tied to a current analysis of the same harvest and batch.

Are bitterness and pungency defects?

The IOC sensory method treats fruitiness, bitterness and pungency as positive attributes. Bitterness is a taste perceived on the tongue; pungency is a trigeminal sensation often felt in the throat. Each can be delicate, medium or robust, and a robust profile need not suit every personal preference.

What can tasting prove?

Certain phenolic compounds are associated with bitterness and pungency. Coughing after a sip, however, does not verify a particular oleocanthal amount, total polyphenol value or health-claim threshold. Exact content requires appropriate batch-specific laboratory analysis; home tasting is useful for exploring sensory character only.

Why health claims are separate

In the European Union, the authorised olive-oil polyphenol claim requires at least 5 mg of hydroxytyrosol and its derivatives per 20 g of oil, together with mandatory consumption information. This is not a general definition of “high polyphenol”. Current rules in Türkiye and every market of sale must be checked separately.

Practical checklist

  • Confirm that the analysis belongs to the same harvest and batch.
  • Look for the method, date, unit and compounds measured.
  • Assess fruitiness, bitterness and pungency separately.
  • Taste a small sip on its own, then try the oil with food.
  • Do not confuse personal preference with legal grade.
Important note

Avoid claims such as “one cough proves high polyphenols”, “more bitter means healthier” or any promise to prevent or treat disease. Product claims require suitable analysis of the same batch and compliance with current law.
