This oil comes from the north parcel of our own grove in Ayvalık. The olives were hand-picked in the first week of October and cold pressed into the bottle the same day.

Yes, it's actually a good sign. Bitterness and pepperiness are natural indicators of high polyphenol content. They are pronounced in early harvest oils and soften slightly over time.
Yes. The ~207°C smoke point covers all everyday cooking. That said, you'll get the early harvest aroma best when used raw; for a more intense profile, take a look at our Trilye early harvest too.
